Cloves are one of the most highly prized and widelyused spices throughout the world in sweet and savoury dishes. It is the aromatic dried flower bud of an evergreen tree. Fresh cloves are pink in color, they change to a dark brown color on being dried. They have a sweet pungent aroma. They are also available in powdered form but its preferable to but whole cloves for the flavour, aroma and medicinal properties to be at their best. It has a strong taste and smell and is therefore, mostly used as a flavour enhancer in curries, meat or sweet dishes like savoruy rice preparations and fruits pies. You can also use it in the preparation of soups, barbeque sauces or to make pickles.
